I have tried many low carb pancake mixes, and other than the much more expensive Bob's Red Mill, I think this is the best. You need to cook them as recommended and the batter tastes awful before cooking so don't even bother to try any raw. Once cooked they are delicious. I use butter and a non-stick olive oil spray on a very hot pan to create perfect pancakes. I tend to pair them with turkey sausage or one of the imitation pork sausages. I also have dropped blueberries and strawberries on top as they cook. They are a bit sweet from the flour substitutes, so you don't need any syrup on them which I consider an added bonus.

As a gluten free girl, I LOVE this pancake mix. My only complaint is that it's difficult to find in stores. Luckily Amazon usually has multiple package deals. Perfect for quick waffles in the mini waffle maker! Bring back the pumpkin paleo flavor please!

Due to some health issues my doctor advised me to cut down on sugar and carbs. We love our bread, pasta and occasional pancakes in this house and finding alternatives can be both challenging in texture and most of all taste. I found this to not be grainy and no after taste. To spruce it up I will add a dash of cake batter or vanilla flavored extract, smashed banana or pumpkin. If my husband likes it than it's got to be good.

Tastes ok with maple syrup. My only issue is the texture is a bit off but I still like it well enough.

I enjoyed the old recipe more than this one. It was simpler!
